The base of a good broth. Our lamb bones simmer down into a rich, gelatinous stock full of flavour and goodness. Nothing goes to waste here: they come from the same chemical-free, pasture-raised lamb as the rest of our range, from Laffy Family Farms.

How to cook it:
- Roast at 200°C until golden, then simmer 12–24 hours with onion, carrot, celery and a splash of vinegar for bone broth.
- Use the stock as the base for soups, risottos and braises.
- Freeze broth in portions for easy weeknight cooking.

Our lamb comes from our friends at Laffy Family Farms on the Darling Downs, about an hour and a half west of Toowoomba. Dan and Veronica Laffy run their flock the same way we run our cattle: chemical-free, 100% pasture-raised, and regeneratively farmed, with animals moved through holistically managed pastures that build the soil year after year. The Laffy family has worked this land for around 90 years, and it shows in how they care for it and for their animals.
We're proud to partner with farmers who share our respect for the land and the animals on it. The result is beautiful lamb: well marbled, naturally sweet and tender, with a clean, rich flavour right across every cut.
